ZUCCHINI “SPAGHETTI” (aka Courge Spag) 0

This is the SIMPLEST dish known to man but I adore it…..makes a great side to ANY fish, esp, trout.

ZUCCHINI “SPAGHETTI”

Serves 2 (on le side)

Ingredients

5 Zucchinis

3 Cloves garlic

3 Tbsp Olive Oil

Salt n Pepper

Juice of  1/2 lemon

Tools

Julienne peeler / mandolin (if you don’t know what that is, click here (www.juliennepeeler.com) – you can buy these at DJ’s or Peter’s of Kensington etc

Method

Julienne the Zukes into a small saucepan

Crush the cloves of garlic on top

Chuck in the olive oil, salt and pepper and lemon juice

Pump up the heat to about medium and toss all ingredients around for a minute or so, then leave them to do their thang

Take off the heat when Zukes have wilted – but not tooooooo wilted – you want them to still look green and scrum-didili-umptious

This is BLOODY delish. I boiled spaghetti and tossed it through with a grating of Parmesan. So tasty. Toddler loved it too.
