PIZZA ACTUALLY DOES MAKE ME SMILE 0

Whenever the topic of “Pizza” comes up, I’m always the first to say, “mmmmm, take it or leave it”…..or “yeah, I enjoy it but I’d never cravvvvvve it or ask for it as a treat”……. or “boring, Pizza’s too healthy”…..you get my drift…. well that was until last night….

Last night was Husbalcious’ birthday and, unlike me, his absolute FAVVVVVVVVVE thing eva eva eva to eat in le whole entire world = Pizza….sooooooo of course that was the obvious thing to cook for dinner, and I was more than happy to do so!

I cheated by purchasing the Pizza base….. if you are going to do this, (which I suggest you do, unless you can make an excellent Pizza dough in 3.5 minutes i.e. unless you are haym at it and have the time), make sure you buy a good quality one – normally made locally and expiry date is within one week – don’t buy anything frozen or heavily packaged that expires in 2034.

Husbles’ fave toppings were used; avocado (I’m with him on this one, cooked avo rox my worldddddd – some people hate it!), mozza (again, please buy a good quality one otherwise you will feel like you are chewing on sneakers), fresh tomato (roma have the best flavours I ‘reckon), prosciutto (buy fresh, thinly sliced, San Daniele is my fave and it’s what I always use), mushrooms (also slice very very thinly), and fresh rocket (chuck on top at end i.e. when pizza out of oven and on serving plate – then drizzle extra v o oil over the top).

You can use the same toppings (combo works a treat) or add, subtract as you please.

Husbies’ request for Pizza is always that it be “extra crispy” so to achieve this I: 1) always cook the pizza on a proper pizza tray (allowing base to crisp up as well as toppings to cook, andddddddddddddd 2) cook it for aggggggggges (normal sized pizza for 1, I’d cook for about 45 mins on 180 – fan forced) you want to remove it only when the cheese starts to bubble and has alllllmost caramelised!
