Eggplant to make you WEEP 0

Ok….so….Let’s get this straight…. I’m NOT saying that this is a breakthrough way to cook EP …….or the FAAAAANCIEST way in the world to cook EP……. or even the ONLY way to cook EP…….Rather, what I AM saying, is that, in my humble opinion, this is the BEST AND SIMPLEST way to cook the purple beast, in terms of extracting MAXIMUM flavour out of it and weeping as you chew! Clear!? Good!

My mother has been cooking EP this way since forever, and the other night when she slapped one on my cooktop she told me that her father annnnnnd HIS father, also cooked it this way…..so they, among others, I am sure, have been doing it since 1605! I really enjoyed learning that little bit of trivia about my family……It made it taste even better that night!

1) Wash your EP and place it on the cook top, in the centre of the hob on med- high heat……

2) Lay out 2 x bowls, a sharp knife, a soup spoon and some tongs…….

3) Leave the EP on the hob, without touching it, for abouttttttttttt 4 minutes. It will start to “bubble” and “spit” and smelllllllllll……. I find the smell delicious, charcoal-y, grill-y, charred goodness (actually don’t think it IS good for you, but all things in moderation!?)

4) After abouttttt 4 mins, using the tongs, turn the EP over. Leave it for about another 4 minutes before removing it and placing it into a bowl…….

5) Using the knife, slice the top off the EP and then slice it in half vertically, keeping it joined along the back side……you are wanting mushy-ness inside the purple skin..

6) Using the spoon, scoop out the contents of one side of the EP……

7) Place it into bowl numero 2……..

8) Scoop out the remaining flesh from the second side of the EP……….

9) Andddd dump it into the bowl as well……….

10) Sprinke with lasssssshings (Sprinkle?? with Lashings??) of a good quality rock salt…..

11) Dust with cracked black pepper……

12) Drizzle with excellent Greek Olive Oil…..

13) Starrrrrrrt weeping……

14) Using the knife and spoon again, roughly chop the EP flesh up into smaller pieces and mix everything together……

15) Shove it on your dining room chair and take a picture with your phone…..

16) Serve as a side dish with fillet steak and rocket salad…..or eat it by itself….or on bread……or tossed through a salad…..blah blah blah….

YUMMMMMMM – End weeping.

Oh I better hurry up!! It is SO SO SO simple, but IMO, the best way to cook Eggplant, in terms of extracting the max flavour!

YUM! I will certainly try it at the earliest opportunity. Shame my kids dont like eggplant – but all the more for me!

Seriously SO yum!!! and yup! all the more for you, as trust me, it’s VERY EASY to demolish a bowl of this in NO TIME! :)
