Can  you boil pasta and stir a sauce!?

Then you can make this with your eyes closed!

SO warm, comforting, satisfying and decadent, Phoodie’s Pasta Quattro Formaggi will make all of your dreams come true. Well your food dreams anyway…. :)

INGREDIENTS

Serves 4

500g Pasta (I used Woolworth’s Gold Eliche Giganti)

300ml pouring cream (or thickened cream)

100g Gorgonzola cheese

100g Parmesan cheese

100g Fontina cheese

100g Gruyere cheese

1 bunch Parsley, chopped finely

Black Pepper, to taste

METHOD

1) Cook the pasta as per the instructions on the packet.

2) Whilst the pasta is boiling away, heat cream over a medium heat, stirring the whole time. Bring to boil and then allow to simmer for a couple of minutes.

3) Remove cream from heat and stir in all 4 cheeses (chop and grate before adding to cream!)

4) Season sauce with pepper to taste.

5) Drain pasta and stir cheese sauce through it.

6) Top with chopped parsley.

Hi Phoodie,

I know that the recipe calls for four cheeses but if you had to limit it two, which ones would work best?

Hi There Michelle – because I am a blue cheese fan I would definitely include the Gorgonzola – but that’s just a personal taste thing – it would work with any of these (or pretty much any other) cheese! Choose what you prefer… if you like strong tastes you would want to go for something blue and maybe the parmesan and if you prefer milder flavours, the fontina and the gruyere would be your best bet! :) Phoodie
