Light.
Simple.
Crispy.
Pizza the way it should be.
Forget heavy, complicated toppings. When making pizza I definitely prefer to bring it back to basics.
Good quality basics.
In this post I have used a Woolworths Gold authentic hand rolled sourdough pizza base, topped with a tomato pizza sauce, plus some baby tomatoes (roasted and fresh), rocket and gorgeous Woolworths Gold Burrata (I put some on before the pizza went in the oven and some when it came out!)
My husband is pizza OBSESSED (and very fussy I might add) and he was mighty impressed with my efforts. So ten points to me.
And the best part? It took me less than 2 minutes to whack it together!

INGREDIENTS
1 x Woolworths Gold sourdough pizza base
10 Cherry Tomatoes – halved
150 grams Burrata
1 handful of Rocket
Extra Virgin Olive Oil
METHOD
1) Preheat the oven to 200 degrees celsius. Scatter half the cherry tomatoes and half of the burrata evenly over the pizza base and place pizza in oven (could that be any easier!?)
2) When golden and crispy (abouttttt 10 mins!) remove from oven and scatter with the second half of the tomatoes, the second half of the burrata and top with the handful of rocket and a generous drizzle of extra virgin olive oil.
YUM!
And if you want to take this delicious meal to the next level, in addition to the ingredients listed above, you could top the Pizza with this SPECTACULAR “Created with Jamie” Lemon and Thyme butterflied lamb leg. Simply cook according to instructions on the packet and then slice thinly. Make the pizza as directed above and as soon as it comes out of the oven, generously scatter lamb pieces over it. Top with the rocket. YUMMMM!
