Baked Salmon w Parsley Crust, New Potatoes and Rocket Salad 0

Serves 2 – but I mean can clearly be adapted to serve 22, 42, 1, etc

Ingredients

2 fillets salmon or 1 x large fillet

small bunch parsley

1/2 white onion

1/2 cup bread crumbs

1 tea spoon olive oil

8 new pots

medium bunch rocket

tiny tiny tiny bit of sweet chilli sauce / mustard etc

Method (Ridiculously Easy, even my cat could do it)

Boil New Potatoes – put on plate (put some butter on ’em if you want them to be delish, otherwise salt and pepper is fine)

Rocket – wash and then put in bowl (dress with olive oil and balsamic)

Salmon – for the crust – add a teaspoon oil to a pan and sweat the  finely chopped onion – take off heat and stir in chopped parsley and breadcrumbs, then season; spread some sweet chilli sauce / mustard etc on salmon so crust will stick (I’m talking like a thin thin thin spread – basically so you can’t taste it); season top of salmon fillet then pour crust on top and pat down with clean hands; shove into oven @ 180 for abouuuuuut 15 minutes – until cooked through – serve with the other stuff.

Did someone just say amazing yummy mid week dinner prepared in seconds?? … Yep! Me!
