Rice Paper Rolls – (minus the rice paper) 0

Serves 4


1 Iceberg lettuce

2 carrots – sliced into toothpick sized bits / julienned – USE A JULIENNE SLICER

1 small red capsicum – sliced into toothpick sized bits

Handful of crushed peanuts

Bunch of coriander – roughly chopped

Couple of large handfuls cooked vermicelli noodles

Bamboo shoots / water chestnuts – small cup

2 chicken breasts – marinated in soy and pan fried / cooked in oven (can use prawns, beef etc)

Sweet chilli sauce


Tear off full, round leaves from the lettuce – these are to be used as the ‘rice paper’ wrapper.

Stuff the carrot, capsicum, coriander, noodles, peanuts, shoots, chestnuts, chicken into the lettuce leaf, douse in sweet chilli sauce and roll over.
