Catherine’s Chocolate Chip Cookie CELEBRATION Crowns! 0

Like (pretty much) everyone else I know, tonight I shall attend a “Let’s watch the Royal Wedding together” celebration. As this particular get- together is being held at the home of an immediate relative, I had slipped into “impolite” mode and not offered to bring a thing….in fact I was planning on wearing my pyjamas…..
Anyway, a few hours ago I decided that taking along at least ONE little treat was the right thing to be doing, and as today is a pretty quiet one, I definitely had the times to bake!
What better than Crown shaped Chocolate Chip cookies?! This recipe belongs to my BFF. I thought I’d give it a shot! I’ve eaten hers before i.e. when she’s made them and they are divine. But you know me….not one to EVER turn down a chocolate chip cookie!
INGREDIENTS
2 1/4 cups plain flour
1/2 teaspoon baking soda
1 cup unsalted butter, room temperature
1/2 cup white sugar
1 cup packed light-brown sugar
1 teaspoon salt
2 teaspoons pure vanilla extract
2 large eggs
2 cups milk chocolate chips
METHOD
Preheat oven to 180 deg cel (160 fan forced). In a small bowl, whisk together the flour and baking soda; set aside. In the bowl of an electric mixer fitted with the paddle attachment, combine the butter with both sugars; beat on medium speed until light and fluffy. Reduce speed to low; add the salt, vanilla, and eggs. Beat until well mixed, about 1 minute. Add flour mixture; mix until just combined. Stir in the chocolate chips.
Now for the fun part! Cutting the cookies! Tip the dough out onto a board…..
Roll the dough out to about a 1cm thickness….
Use your crown cookie cutter to cut the biscuits into shape…..
Place them about 10cm apart on a lined baking tray…
Bake in oven until cookies are golden around the edges, but still soft in the center, 8 to 10 minutes….
Remove from oven, and let cool…
She normally just makes the cookies in balls, which melt whilst being baked and then serves them like that, but for tonight, once the cookies had cooled completely, I dusted them with Icing Sugar!
Actually DOUSED them in Icing sugar….

Note: When stored in an airtight container at room temperature, cookies last for up to 1 week.
