Broccoli, Pine nut and Parmesan Tagliatelle with Lemon, Chilli and Garlic. 4

More comfort food!

And why not!?

This one’s a REAL winner; takes minus 1 second to make, all ingredients are most likely sitting in your home RIGHT THIS SECOND crying out to be used, it’s cheap, looks good and is just as simple to prepare for 1 person as it is for 100 people (ok, maybe not 100, but you get what I mean!)

Here’s the list of INGREDIENTS to serve 2:

1/4 cup Olive oil

1 x Small head broccoli

Zest of 1/2 lemon

1 clove garlic, crushed

1/2 small red chilli, chopped finely (seeds or no seeds, up to you!)

1/3 cup toasted pine nuts (toast yourself or buy already toasted)

1/2 cup parmesan

Tagliatelle

METHOD

1) Boil broccoli (DO NOT OVERCOOK IT! I REPEAT DO NOT OVERCOOK! You should ALWAYS retain a good crunch and a nice bright green colour when cooking broccoli!) Evem though you won’t be serving the stalk, boil it as well so it flavours the water that you will then cook the pasta in.

2) Into a medium-heat fry pan, add some olive oil and the garlic, cook it off for about a minute (do not burn!!!)

3) Add in lemon zest, chilli and pine nuts and cook for about 3 or 4 minutes.

3) Toss in the boiled broccoli and cook for about another minute or so, just enough to get flavour into broccoli.

4) Cook the pasta – in the same water that you cooked the broccoli – (again, DON’T OVERCOOK IT!) and drain. Once done, toss through half of the cheese, salt and pepper and about a tablespoon of olive oil, enough to coat the pasta and keep it moist.

5) Combine Pasta and Broccoli and top with the remaining parmesan.

WEEP. HOWL. Then once you’ve calmed down, EAT!

Lemon, chilli and garlic is one of my favorite pasta combinations. I’m also a big fan of broccoli pasta – I always feel healthier eating it

Can I promise you that it will be further enhanced by bacon. Not in a Homer Simpson kind of way, but broccoli and bacon are GREAT together. I make a steamed broccoli side dish that has garlic, bacon and Parmesan tossed through it. Try it!

I ADORE broccoli and bacon, or better still pancetta!!!! With this dish, i wanted to keep it Vegetartian, obviously not that I am but had had reader requests!!! Also, I kind of feel that MOST people (again, not me!) find the combo of parmesan and baon TOO salty!!! I guess they could just not season with salt at the end if that was the case….. :)
