Phoodie’s Carrot Cupcakes w Walnuts + Honey Buttercream 6

These delicious wonders are not only tasty as goodness knows what but they’re honestly, truly, cross my heart, pinky swear, BLINDFOLD-ME-NOW, SUPER EASY to make! Whether you’re looking for something to smash together with the kids on a Saturday morning or the in-laws are popping over with only a minute’s notice, these WILL NOT FAIL YOU! Trust me phans… when have I failed you!??!!?!?
INGREDIENTS
(Makes 12)
Cupcakes
1 and a half cups self-raising flour
1 cup brown sugar
3 flat teaspoons ground cinnamon
3 eggs
1/2 cup vegetable oil
2 and a half cups finely grated carrot
1 cup roasted walnuts – chopped (reserve some to place atop 12 finished cupcakes)
Buttercream Icing
3 tablespoons honey
1 cup butter – unsalted
4 cups icing sugar
(you may need 2 – 3 teaspoons milk (or more?! – see method) to achieve desired spreading consistency for icing.)
METHOD
1) Chop walnuts and roast on baking paper in oven until slightly golden (oven at 180 deg cel. fan forced oven – abouttttttt 5 mins) Set aside.
2) Grate carrots.
3) Place all dry ingredients in bowl and mix together i.e flour, sugar and cinnamon and mix.
4) Add eggs and oil and mix everything together well.
5) Add carrots and nuts (reserving some nuts for decoration of tops of cupcakes later) and mix well.
6) Divide evenly into 12 cupcake pans and place in oven at 165 deg cel (fan forced oven) for abouttttttttttttt 25-30 minutes.
7) To make buttercream – cream together butter and 1 cup of icing sugar in mixer for 3 minutes, add an additional cup of sugar every 2 – 3 minutes until icing thick and fluffy. Melt honey in microwave and stir through.
8) Ice cooled cakes and sprinkle with remaining walnuts.
