I wanna tell you something RIGHT now.

Up front.

Before we even begin.

These cupcakes were made in a CRAAAAAAAAAAZY rush with one child hanging off each hip and a one hour countdown until all of us had to be dressed and actually AT a party.

CHAOS TO THE POWER OF TWO THOUSAND.

Anyway, I made them, not as perfectly as I would have liked, and without taking as many pics as I normally do – apologies galore to the moon and back. But I DID make them and I DID get the kids ready and we DID arrive at the party….. BUT……. and this is a HUGE BUT, ….. somebody (MEEEEE!) tripped at the front gate of the party house and the ENTIRE TRAY OF CAKES went flying into the air and landed on the patch of grass out the front on the street….. some of the cakes actually landed in doggy do-do. SO NO ONE saw these cakes except me and the kids…… In fact, if it weren’t for the photographic evidence that can be seen below in this post, there would be no proof that I ever even made them!

That should teach me to take on too much in such a short space of time!

But it probably won’t…..

All that aside, this is a cute one for Christmas.

Note: I just ran into a friend in the grocery store who made these on Christmas Day…. AND GUESS WHAT HAPPENED!?!? She dropped them down the stairs as she was about to enter the house she was going to for lunch!!!!!! I know! HORRIBLE! After a discussion with her, the conclusion was that we are not the clumsy klutzy folk at fault but rather, it’s Santa’s fault….. these cakes are rather top heavy with that big strawberry placed on top so PLEASE, if you make them….. BE VERY VERY CAREFUL!!! She at least managed to save a few of hers, I was not so lucky!! :)

INGREDIENTS

1 batch of these Nigella Cupcakes that I saw on the fabulous “Grab your fork” blog

12 Large strawberries, washed and topped

12 mini white marshmallows

150g white chocolate, melted

1 cup icing sugar, sifted

12 santa cups (I bought these from Spotlight, but any arts and craft or discount store should have something similar)

METHOD

Make cupcakes as per this recipe and allow to cool

Dip bases and tips of strawberries into the white chocolate, adding a marshmallow to the top

Place cooled cupcakes into Santa cups

Sift Icing sugar on top of cupcakes

Place strawberry “santa hat” on top of cupcake

ET VOILA!

I think these look awesome! I’m thinking of giving them a go for Christmas Day. I would need to use a gluten free recipe though, would you know a good one? Also, where are the Santa cupcake holders from?

Thanks so much! Hmmmm…. I don’t actually have a GF cupcake recipe but friends of mine talk about a packet mix one that they love…. and now I can’t think of the brand…..so sorry!!! Is it Greens!? Can’t remember! I’m not much help :( I found the coffee cups at Spotlight in Sydney (where are you located?) but have seen similar in discount / dollar stores and arts /crafts shops!
