Triple Layer Hummingbird Cake with Vanilla Buttercream + Edible Pearl Glitter 9

Since my friend Amanda introduced me to the Hummingbird back in 2003, I have eaten my fair share of this delicious cake. Some recipes use pecans, others use walnuts, some use coconut, others leave it out. The variations are endless.

Over time I have DEFINITELY found that this taste.com.au recipe is the best. I’ve made it LOADS and LOADS and I have never, ever had it not turn out perfectly!

This triple layer version with all the bling was created for a little girl’s 1st birthday. In summary, the brief for the cake for “Vintage Tea Party.” I stacked three cakes on top of each other, spread buttercream icing in between each layer and over the entire cake, topped with the edible glitter and delicately placed several “pretend flowers” (hydrangeas, peonies and vintage roses) on one side decorate.

NOTE: The ONLY thing I have changed from this recipe, and you may find your oven is different, is to cook the cake for an hour, 40 minutes is just never enough for me. Oh, also, I normally make the cream cheese icing from the taste recipe but for THIS cake I made buttercream as I prefer the colour! You will find the buttercream recipe HERE (I didn’t use the honey for this cake’s icing.)

Thanks so much! Are you from Australia!? I bought them from a store called Spotlight, if you are are from OZ I am sure you know it! They are quite expensive but lots of the bargain / discount / dollar stores sell them too…. not as pretty but good enough depending on the occasion!? :)

This looks absolutely amazing! If I were to attempt to replicate this, would I bake 3 hummingbird cakes, or bake one and cut it into 3 rounds?
