There pretty much are NO WORDS for these. THAT’S how heavenly they are!
Well…. I guess there are SOME words, otherwise this would be a silent blog post… or a wordless one rather…
In any case, let’s keep this simple….
These Bikkies are….
AMAZINGLY DELICIOUS
Soft AND Crunchy.
Rich and Chocolately.
EASY to make.
LOVED BY ANYONE AND EVERYONE.
The perfect Christmas (or anytime!) gift!
Ingredients (Makes 35 biscuits)
100g salted butter
1½ cups brown sugar
1 teaspoon vanilla essence
2 large eggs
100g dark chocolate, melted
1¼ cups plain flour, sifted
2 teaspoons baking powder, sifted
¼ cup cocoa, sifted
1½ tablespoons red food colouring
150g dark chocolate, roughly chopped
¼ cup white sugar
¼ cup icing sugar
Method
- Preheat the oven to 160 degrees Celsius.
- In the bowl of an electric mixer, at medium speed, mix together the butter, brown sugar and vanilla for 5 minutes, until the mixture is light in colour and well combined.
- Beat in the 2 eggs, one by one, making sure they are incorporated well into the mixture.
- Add the 100g of melted chocolate and beat until combined.
- After this, add the plain flour, baking powder, cocoa and food colouring and continue to beat at medium speed until a dough forms.
- Turn the mixer off and using a spatula, fold through the chopped chocolate.
- Cover the bowl and place in fridge for 60 minutes.
- Roll heaped soup spoons of the dough into the white sugar, shaping them into balls and then toss through the icing sugar.
- Place the biscuits on baking paper lined trays leaving 5cm between each one.
- Bake the biscuits for about 15mins or until they appear cracked.
- Remove and cool on wire racks.
