Did you know that Brain Cancer kills more children than any other disease?

The cause for it is unknown, it cannot be prevented and treatment options are few.

Pretty frightening, hey?

Cure Brain Cancer Foundation is the largest dedicated fundraiser for Brain Cancer research in Australia and a HUGE increase in research funding is needed to accelerate new treatments and improve survival. Their mission is bold; To Increase five-year survival to 50% within ten years.

When I found all of this out (via my friend, the gorgeous R, who has been associated with this incredible foundation for some time) I wanted to know how I could help spread the message, and thus (HOPEFULLY) increase donations.

The first thing that came to my mind was PHOODIE.

So I took to my Facebook page, and Cure Brain cancer foundation took to their Facebook page and we asked the followers to suggest ingredients that they considered to be BRAIN FOODS. We decided to choose the most popular suggestion and for me to then convert that ingredient into a FABULOUS, SIMPLE, DELICIOUS, ORIGINAL PHOODIE RECIPE. This would give me the chance to write a blog post and thus a chance to spread the above message about Brain Cancer.

So where to from here!? Well below is my recipe, (SALMON was the ingredient chosen!) and apart from cooking it and sharing this link and raising more awareness about the Cure Brain Cancer Foundation (which when people who previously didn’t know about it, find out about it and donate!) you can help by joining hundreds of Australians taking part in Walk4BrainCancer this November!

PHOODIE’S ASIAN SALMON WITH FRESH HERB + MACADAMIA TOPPING

INGREDIENTS

The Salmon

4 x 200 g salmon fillets, bones and skin removed

Salt and Pepper

The Wasabi Mayo

1/2 cup good-quality whole egg mayonnaise

2 and 1/2 teaspoons wasabi paste

Salt to taste

Fresh Herb + Macadamia Topping

1 bunch coriander, chopped

1 bunch parsley, chopped

1/4 bunch spring onions, chopped finely

1 cup roasted macadamia nuts, roughly chopped

Fresh Herb + Macadamia Topping dressing

1/2 small red chilli, deseeded and chopped finely

1 teaspoon seasame oil

1/4 teaspoon crushed ginger

2 tablespoons soy sauce

2 tablespoons rice wine vinegar

METHOD

1) Preheat oven to 200 degrees celsius. Season fillets on both sides with salt and pepper and place them on a baking paper lined tray. Cook in oven for approximately 15/20 minutes. The fish will turn opaque when cooked completely. You  want it to be a little undercooked in the very centre as it will continue to cook out of oven when you are garnishing it.

2) To make the wasabi mayo, whisk ingredients together with a fork. Set aside.

3) To make the herb +  macadamia topping, combine all chopped ingredients together in a bowl. Set aside.

4) To make the dressing for the herb +  macadamia topping, combine all ingredients in a glass jar and shake. Teaspoon by teaspoon, coat the herbs/nuts with this dressing. You don’t need to use it all (you can, I do) you just want a generous coating over the herbs and macadamias.

5) Remove the salmon from the oven. Allow to cool slightly before spreading wasabi mayo generously over each piece and topping with dressed herbs + macadamias.

6) Serve any left over mayo and herb/nut mixture alongside the garnished salmon pieces so that people can add more of whatever they like!

This looks so good! I never would have thought of salmon and macadamia nuts but what a great combo. Thanks for spreading the word about brain cancer. We have all been touched by cancer in some form and I’m with you in praying for the day this disease is wiped out.

Hi Jess! Potatoes of some description – Jamie Oliver’s smashed ones are great, or dauphinoise or even potato salad… or Asian salad with cabbage and Mr Chang’s noodles – do you know that one? If you go to the supermarket and buy Mr change’s noodles there is a salad recipe on the back – that is great with this dish. Green beans, simply steamed with olive oil and lemon are also great xx
