TRULY DELICIOUS MINI CUSTARD TARTS 0

There are certain foods that I just CANNOT go past.
Let me explain.
When I go to the fish markets each week I normally grab the same three things; a couple of whole baby snappers, trout tails and several kilos of prawns.
Scallops are not on that list.
BUT, if I walk past scallops, I HAVE to buy them. The same goes for freshly steamed dumplings, sour cream and chive Pringles and, you guessed it CUSTARD TARTS.
There may be MONTHS in between me sampling a custard tart, but if one pops up in my face at a random location I would never pass by without making a purchase.
I’ve made them many times but I find this recipe to be the most delicious and satisfying. My Dad actually passed it on to me as he knows what a CT fan I am. He found it HERE. The recipe is for a large tart and I converted it to mini ones. I actually think it is better as a large one, but that’s up to you! Oh, and I used pre-made shortcrust pastry cases and they were amazing! You can either make your own pastry, use pre made mini cases or a pre made large case, OR use store bought and roll it out yourself! Lots of options in terms of pastry but only one option in terms of “Should you make this tart?” and that is “YES!!!!!”
