PHOODIE’S SALTED CARAMEL AND PEANUT POPRCORN CRUNCH! 4

I have never.

I have honestly NEVER.

Ok, that’s not true, there are several other times in my life when I have, like HERE, HERE, HERE, HERE and HERE.

But SERIOUSLY.

I have NEVER (apart from those times mentioned above – and a few others on this site!) tasted anything this addictively delicious!

Once you pop, you can’t stop.

I know that’s meant to be the tagline for Pringles, but it is just SO fitting for this recipe.

I promise you with every fibre of my being that there is NO WAY that you will be able to only just have ONE piece of this.

You’ll have at least 10.

Handfuls.

So easy to bang together, perfect as gifts for friends, or kid’s teachers or even great to bring along to the movies (does anyone still do that or was it just my Aunty Yum – now 100 years old and amazing! – that used to do that?!)

Give it a crack this weekend!

INGREDIENTS

(To make a large bowl)

160g or 12 cups popcorn – either homemade or store bought (If in Australia, Cobs make the best store-bought popcorn in my opinion!)

120g unsalted butter

3/4 cup caster sugar

3 tablespoons golden syrup

2 teaspoons salt (RED ALERT – if you are using store bought popcorn it is PROBABLY salted, if it is, DO NOT ADD THIS SALT!)

1 cup crushed peanuts

METHOD

1) Pop your popcorn or open up the packet and empty into a large bowl.

2) In a saucepan over medium heat melt the butter down with the golden syrup and the sugar. Stir the whole time that you are doing this.

3) Once the sugar has dissolved (this takes about 5 minutes) STOP stirring but leave the heat on medium until the mixture starts to simmer. Simmer for a further 5 minutes or until the caramel turns a golden brown colour.

4) Take the pot of caramel off the heat, stir in the salt and the peanuts and pour as evenly as you can over the popcorn in the bowl. Use a wooden spoon to give it all a good stir.

DO NOT FEAR IF THE CARAMEL APPEARS TO BE “CLUMPING TOGETHER” AS IT IS MEANT TO DO THIS! IT WILL STICK TO SOME PIECES AND NOT OTHERS ETC – IT IS NOT MEANT TO BE PERFECT!

5) Transfer to baking paper lined cookie trays to cool.

Stores in airtight tupperware for a couple of days although you won’t need to worry about that as you will eat it all up before then!

I just made this, and it is amazing. I didn’t have enough peanuts, so I substituted some of the butter for peanut butter. Possibly the best thing to make for any occasion.
